Veryberry Strawberry Muffins

So everytime I opened the fridge, I smelled the delicious scent of fresh strawberries which made me crave nothing other than…MUFFINS! I based my recipe of a wonderful site I found and altered it per my liking. This recipe makes 12 light, fluffy, scrumptious morning meals. 

Ingredients:

1 cup strawberries chopped into small pices

1 cup all purpose flour

3/4 cup whole wheat pancake mix or plain flour

1 tbs ground flax seed

3 tbs water

1/2 cup milk

1/4 cup oil

1 tsp salt

1 tsp vanilla extract

1/2 cup sugar plus 1 tbs extra 

1 tsp lemon juice 

1 tsp baking powder

1 tsp baking soda

Put the lemon juice and 1 tbs sugar into the strawberries and let it marinade until later use

In a bowl, combine the flax seed and water

In another bowl, sift the flours, sugar, salt, baking power, and baking soda

add strawberry mixture to flour and coat the strawberries evenly with flour

Fold the wet ingredients into the strawberry flour mixture and stir until the ingredients are JUST incorporated, but not overmix
